Edinburgh, Scotland (23 Great King Street)

After some coffee, it was time to find some zucchini (courgette) – the missing ingredient for the Skinny Lasagna Soup. I decided to first try the local Tesco to see if they had the¬†zucchini. And they did! This was great since it looks like we’re in for another rain shower.

I’ve been keeping an eye on the weather since we’re expected to pick up the remnants of Hurricane Ophelia. Would be exciting to have a strong storm come our way. Power outages would be minimal, if any, since all of the electrical lines are underground.

Lots of chopping to prepare the zucchini, onion, and mushrooms. I’d already made the vegetable stock a couple of days before. Then combine the ingredients together, add the pasta then the spinach and you’re done. Had the soup for both lunch and dinner. Shared this recipe with an Oregon friend who I spoke with today.

The wind is really picking up tonight, but no rain. The winds are expected to increase tomorrow with high wind (35 mph) expected for most of the day.

I remembered that today is the 6th anniversary of my dad’s passing. My grandfather Clodfelter also passed on October 16th, 29 years ago. Two men who contributed greatly to who I am today.
